For the Onion Bhaji

Prepare the Onions
Slice the onions thinly and place them in a large mixing bowl.

Mix Dry Ingredients
In a separate bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.

Heat Oil
In a deep frying pan, heat the oil over medium heat until hot.

Fry the Bhajis
Drop spoonfuls of the onion mixture into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crisp, about 4-5 minutes.

Drain Excess Oil
Remove the bhajis with a slotted spoon and drain on paper towels to remove excess oil.
For the Mint Chutney

Blend Ingredients
In a blender, combine fresh mint leaves, cilantro, green chili, lemon juice, salt, and water.

Process Until Smooth
Blend until the mixture is smooth and well combined. Adjust salt and lemon juice to taste.

Serve
Transfer the chutney to a serving bowl and serve alongside the hot onion bhajis.
