Preparation of Spices

    Crush the Spices

    In a mortar and pestle, crush the cloves, cardamom pods, and black peppercorns lightly to release their flavors.

    Prepare Ginger

    Grate the fresh ginger and set it aside for later use.

Brewing the Tea

    Boil Water

    In a saucepan, bring 2 cups of water to a boil over medium heat.

    Add Tea and Spices

    Once the water is boiling, add the crushed spices, grated ginger, and black tea leaves to the saucepan.

    Simmer

    Reduce the heat and let the mixture simmer for about 5-10 minutes to allow the flavors to infuse.

Finalizing the Chai

    Add Milk and Sugar

    Stir in 1 cup of milk and 2 tablespoons of sugar, adjusting the sweetness to taste.

    Bring to a Boil

    Increase the heat and bring the mixture back to a boil, then remove from heat.

    Strain and Serve

    Strain the chai into cups using a fine mesh sieve to remove the tea leaves and spices. Serve hot.
