Method
Preparing the Sticky Rice
- 1
Rinse the Rice
Rinse 1 cup of glutinous rice under cold water until the water runs clear, about 2-3 times.
- 2
Soak the Rice
Soak the rinsed rice in water for at least 4 hours or overnight for best results.
- 3
Steam the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam over boiling water for about 30-40 minutes until the rice is tender and sticky.
Making the Coconut Sauce
- 4
Prepare the Coconut Sauce
In a saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt. Stir over medium heat until the sugar dissolves. Do not let it boil.
- 5
Set Aside Coconut Sauce
Reserve about 1/4 cup of the coconut sauce for drizzling on top when serving.
Preparing the Mango
- 6
Slice the Mango
Peel the ripe mangoes and slice them into thin strips or wedges.
Assembling the Dish
- 7
Mix Coconut Sauce with Rice
Once the rice is cooked, remove it from the steamer and place it in a bowl. Pour the remaining coconut sauce over the warm rice and mix well.
- 8
Plate the Dish
Serve the sticky rice on a plate, topped with the sliced mango and drizzled with the reserved coconut sauce.
- 9
Serve and Enjoy
Enjoy your Mango Sticky Rice warm or at room temperature.
