Preparation

    Prepare the Vegetables

    Peel and chop the potatoes, carrots, and sweet potato into bite-sized pieces.

    Chop the Aromatics

    Mince the garlic cloves and finely chop the onion.

Cooking the Stew

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Add the beef cubes and sear them on all sides until browned. Remove the beef from the pot and set aside.

    Sauté the Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

    Combine Ingredients

    Return the seared beef to the pot. Add the semi-sweetened tomato sauce, beef broth, soy sauce, brown sugar, salt, and black pepper. Stir well to combine.

    Add Vegetables

    Add the chopped potatoes, carrots, and sweet potato to the pot. Stir to incorporate all ingredients.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.

Serving

    Plate the Stew

    Once cooked, taste and adjust seasoning if necessary. Serve hot in bowls and garnish with chopped green onions and cilantro if desired.
