Method
Prepare the Fries

Preheat the Oil
In a large pot or deep fryer, heat vegetable oil to 180°C (350°F).

Fry the Potatoes
Carefully add the frozen French fries to the hot oil in batches. Fry until golden brown and crispy, approximately 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While still hot, sprinkle fries with salt to taste.
Cook the Chili

Brown the Beef
In a large skillet or saucepan, brown the ground beef over medium heat. Drain excess fat.

Add Remaining Chili Ingredients
Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, black pepper, and water. Bring to a boil.

Simmer
Reduce heat to low and let the chili simmer for about 20-25 minutes, stirring occasionally.
Assemble the Dish

Layer Fries and Chili
Place a generous portion of crispy fries on a serving plate. Top with a hearty scoop of chili.

Sprinkle shredded cheddar cheese over the chili while it is still hot, allowing it to melt.

Top with sliced jalapeños if desired.
