Marinating the Chicken

Prepare the Marinade
In a mixing bowl, combine soy sauce, coconut milk, brown sugar, lime juice, minced garlic, minced ginger, and cayenne pepper. Mix well until the sugar is dissolved.

Marinate the Chicken
Cut the chicken breasts into bite-sized pieces or strips. Add the chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours or overnight for best results.
Making the Peanut Sauce

Combine Ingredients
In a saucepan over medium heat, combine the peanut butter, soy sauce, lime juice, brown sugar, water, sriracha sauce, and minced garlic.

Cook the Sauce
Stir the mixture well and cook for about 5-7 minutes, or until it reaches a smooth consistency. Adjust the thickness with more water if necessary. Remove from heat and set aside.
Grilling the Chicken

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.

Remove the skewers from the grill and let them rest for a few minutes. Serve the chicken satay with the peanut sauce on the side for dipping.
