    Marinate the Pork

    In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the pork tenderloin and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Pork

    Preheat a grill or grill pan over medium-high heat. Remove the pork from the marinade and thread onto skewers. Grill for 15-20 minutes, turning occasionally, until cooked through and the internal temperature reaches 70°C (160°F).

    Prepare the Tzatziki

    While the pork is grilling, prepare tzatziki sauce (optional). Combine 1 cup of Greek yogurt, 1 grated cucumber (squeezed to remove excess moisture), 1 minced garlic clove, 1 tbsp of lemon juice, and salt to taste.

    Assemble the Souvlaki

    Once the pork is cooked, remove from skewers. Serve the pork on warm pita bread topped with diced tomatoes, sliced onions, and a generous dollop of tzatziki sauce.
