Prepare the cheese
Cut the Kasseri cheese into thick slices, about 1/2 inch thick. Pat them dry with a paper towel.
Make the batter
In a shallow bowl, whisk together the eggs, salt, and black pepper until well combined.
Coat the cheese
Dredge each slice of Kasseri cheese in the all-purpose flour, ensuring it's fully coated. Then dip the floured cheese into the egg mixture, allowing any excess to drip off.
Heat the oil
In a large frying pan, heat the olive oil over medium-high heat until it's hot but not smoking.
Fry the cheese
Carefully add the coated cheese slices to the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
Flambé
Once the cheese is fried, carefully pour the ouzo or Metaxa over the cheese and use a long lighter to ignite it. Allow it to flame briefly until the alcohol burns off.
