Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into even-sized wedges or sticks.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the Potatoes
Carefully add the potatoes in batches to the hot oil, frying them until they are golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, black pepper, garlic powder, paprika, and dried oregano.

Add Feta and Serve
Transfer the seasoned fries to a serving platter, sprinkle crumbled feta cheese on top, and garnish with fresh parsley. Serve immediately.
