Preparation Instructions
Prepare the Chickpeas
Soak the dried chickpeas in water overnight. Drain and rinse before using.
Make the Falafel Mixture
In a food processor, combine soaked chickpeas, garlic, onion, parsley, cumin, coriander, salt, black pepper, baking powder, and flour. Blend until a coarse mixture forms.
Shape the Falafel
Form the mixture into small balls or patties, about 1.5 inches in diameter.
Fry the Falafel
Heat vegetable oil in a deep skillet over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
Assemble the Sandwich
Warm the pita bread slightly. Fill each pita pocket with falafel, lettuce, diced tomatoes, sliced onion, feta cheese, and a generous dollop of tzatziki sauce.
Serve
Serve immediately while warm. Enjoy your falafel sandwich!
