Preparation Directions
Prepare the Filling
In a large bowl, combine the ground beef, uncooked rice, chopped onion, parsley, dill, olive oil, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Prepare the Grape Leaves
If using jarred grape leaves, rinse them thoroughly under cold water to remove excess brine. Lay a grape leaf flat on a clean surface, with the stem end facing you.
Stuff the Grape Leaves
Place about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll it up tightly from the base to the tip. Repeat this process with the remaining leaves and filling.
Cook the Dolmathes
Line the bottom of a large pot with any broken grape leaves to prevent sticking. Arrange the stuffed grape leaves seam-side down in the pot. Pour the water or broth over the dolmathes, cover, and simmer on low heat for about 45 minutes.
Serve
Once cooked, remove from heat and let cool slightly. Serve warm, drizzled with additional lemon juice if desired.
