Prepare the Seafood

In a bowl, combine the large shrimp, mussels, and white fish chunks. Set aside.

Chop the Vegetables

Chop the onion, garlic, red bell pepper, celery, and carrot into small pieces. If using fresh tomatoes, dice them as well.

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

Add Remaining Vegetables

Stir in the chopped red bell pepper, celery, and carrot. Cook for another 3-4 minutes, stirring occasionally.

Incorporate the Tomatoes and Stock

Add the diced tomatoes and vegetable or fish stock to the pot. Stir well to combine.

Season the Stew

Add the bay leaves, dried thyme, paprika, salt, and black pepper. Bring the mixture to a simmer.

Once the stew is simmering, gently add the seafood mixture. Cover the pot and cook for about 5-7 minutes until the seafood is cooked through and the mussels have opened.
