    Prepare the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, red and green bell peppers, and mushrooms. Sauté until the vegetables are softened, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced steak. Cook for about 3-5 minutes, stirring occasionally until the steak is cooked to your desired doneness. Season with salt and pepper.

    Assemble the Sub

    Slice the French bread sub rolls lengthwise and place them on a serving plate. Layer the cooked steak on the bottom half of each roll, followed by the sautéed vegetables. Top with provolone cheese slices.

    Melt the Cheese

    Place the assembled subs under a broiler for 1-2 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, add shredded lettuce and sliced tomato on top of the cheese, and drizzle with mayonnaise to taste. Close the sandwich and serve immediately.
