Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8 minutes, then remove from the oven and let cool while you prepare the filling.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the granulated sugar and mix until well incorporated. Add the sour cream, vanilla extract, and salt, mixing until combined. Finally, add the eggs one at a time, mixing on low speed until just blended.

Combine and bake
Pour the cream cheese filling over the cooled crust, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool gradually for about 1 hour.

Chill and serve
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving. To serve, carefully release the sides of the springform pan and slice the cheesecake into wedges.
