    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the Russet potatoes under running water. Pat them dry with a towel.

    Bake the Potatoes

    Prick each potato with a fork several times to allow steam to escape. Place the potatoes directly on the oven rack and bake for 45-60 minutes until they are fork-tender.

    Scoop and Season

    Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato on the skin. Brush the skins with olive oil and sprinkle with salt.

    Bake Again

    Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until they are crispy.

    Add Fillings

    Remove the baked potato skins from the oven. Sprinkle the shredded cheddar cheese over the skins, followed by your choice of bacon, broccoli, mushrooms, onions, or chili.

    Melt the Cheese

    Return the potato skins to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and serve hot with a dollop of sour cream if desired.
