    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, red bell pepper, and minced garlic. Sauté until the vegetables are soft, about 5 minutes.

    Brown the Meat

    Add the ground beef to the pot. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.

    Add Remaining Ingredients

    Stir in the diced tomatoes, kidney beans, black beans, chili powder, ground cumin, salt, and black pepper. Mix well.

    Simmer the Chili

    Bring the mixture to a simmer. Reduce heat to low and let it cook for at least 30 minutes, stirring occasionally. For better flavor, simmer for up to 1 hour.

    Serve

    Ladle the chili into bowls and serve hot with tortilla chips, shredded cheese, sour cream, and chopped onions on the side.
