Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the soaked fries to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Sprinkle the fries with salt while they are still hot.

In a saucepan, heat the canned chili beans until warmed through. Set aside.

Place the hot fries on a serving plate. Top with warm chili beans, shredded cheddar cheese, a dollop of sour cream, and chopped green onions.
