    Prepare the Potatoes

    Wash and peel the russet potatoes, then cut them into thin strips (about 1/4-inch thick). Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Carefully add a batch of potatoes to the hot oil, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove the fries with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle the shredded cheddar cheese generously over them, allowing it to melt slightly from the heat of the fries.
