    Sauté the Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Cook the Vegetables

    Add the chopped bell pepper, carrot, zucchini, and cauliflower to the pot. Sauté the vegetables for about 5-7 minutes until slightly softened.

    Add Coconut Milk and Spices

    Pour in the coconut milk and stir in the curry powder, salt, and black pepper. Bring the mixture to a gentle simmer.

    Simmer

    Cover the pot and let the curry simmer for 15-20 minutes, stirring occasionally, until the vegetables are tender.

    Finish with Cilantro

    Remove the pot from heat and stir in the chopped cilantro. Adjust seasoning as needed.

Basmati Rice

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork before serving.

Naan

    Activate Yeast

    In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and yogurt. Mix until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 1 hour.

    Roll Out the Naan

    After the dough has risen, divide it into equal portions and roll each portion into a round shape about 1/4 inch thick.

    Cook the Naan

    Heat a skillet over medium-high heat. Cook each naan for about 2-3 minutes on each side until golden brown. Brush with melted butter before serving.
