Prepare the Pork Belly
Preheat your oven to 220°C (428°F). Score the skin of the pork belly in a criss-cross pattern, ensuring you don’t cut into the meat.

Season the Pork
Rub the pork belly with olive oil, then generously sprinkle the salt and black pepper over the skin and into the scored cuts.

Roast the Pork
Place the pork belly on a roasting rack in a baking dish. Roast in the preheated oven for 30 minutes, then reduce the temperature to 160°C (320°F) and roast for an additional 1 hour.

Crisp the Crackling
To achieve the perfect crackling, increase the oven temperature back to 220°C (428°F) for the final 15-20 minutes until the skin is golden and crispy.

Rest and Slice
Remove the pork from the oven and allow it to rest for 10 minutes before slicing.

Add Lemon Juice
Once the apples are soft, remove from heat and stir in the lemon juice.

Mash or Blend
For a chunky sauce, mash with a fork or potato masher. For a smoother sauce, blend with an immersion blender until desired consistency is reached.

Allow the apple sauce to cool slightly before serving alongside the pork crackling.
