Method

Preparing the Chips

    Cut the Potatoes

    Peel the potatoes and cut them into thick strips (about 1/2 inch wide).

    Soak the Chips

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Chips

    Drain and pat the potatoes dry with a clean kitchen towel.

    Heat the Oil for Frying

    In a large pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 325°F (160°C).

    First Frying

    Carefully add the chips in batches to the hot oil and fry for about 4-5 minutes, until they are soft but not browned. Remove them with a slotted spoon and let them drain on paper towels.

Preparing the Fish

    Make the Batter

    In a bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the ice-cold sparkling water until the batter is smooth.

    Heat the Oil for Frying

    In another pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, allowing excess to drip off.

    Fry the Fish

    Gently place the battered fish in the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain.

Making the Tartar Sauce

    Combine Ingredients

    In a bowl, combine the mayonnaise, dill pickles, capers, lemon juice, fresh dill, and salt. Mix well.

Final Frying of Chips

    Second Frying

    Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for about 3-4 minutes until golden and crispy. Drain on paper towels and season with salt to taste.

Serving

    Plate the Dish

    Serve the fried fish alongside the chips and a generous dollop of tartar sauce.
