    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove from oven and set aside to cool.

Filling

    Prepare the Cream Cheese Mixture

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the granulated sugar and mix until well combined.

    Incorporate Remaining Ingredients

    Add the sour cream, vanilla extract, and eggs. Mix on low speed until just combined, making sure not to overmix.

    Pour the Filling

    Carefully pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

    Cool and Chill

    Remove the cheesecake from the oven and let it cool at room temperature for another hour. Then refrigerate for at least 4 hours or overnight before serving.

Berry Compote

    Prepare the Berry Compote

    In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir occasionally until the mixture comes to a simmer.

    Cook the Compote

    Let it simmer for about 10 minutes, or until the berries have softened and the sauce has thickened. Remove from heat and allow to cool.

    Serve

    Once cooled, pour the berry compote over the chilled cheesecake before serving.
