Preparing the Potato Sticks

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into sticks about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Potatoes

    Drain and pat the potatoes dry. In a large bowl, toss them with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

    Bake the Sticks

    Spread the seasoned potato sticks in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Making the Dipping Sauce

    Combine Ingredients

    In a medium bowl, combine mayonnaise, ketchup, hot sauce, lemon juice, garlic powder, and dried parsley.

    Stir the ingredients together until smooth and well combined.

    Chill the Sauce

    Refrigerate the dipping sauce for at least 15 minutes to allow the flavors to meld.
