Preparation
Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.
Season the Meat
Rub both sides of each filet mignon with salt, black pepper, and garlic powder. Set aside.
Cooking
Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.
Sear the Filet Mignon
Add the filet mignon to the hot skillet. Sear for 4-5 minutes on one side until a golden-brown crust forms. Flip and sear the other side for another 4-5 minutes for medium-rare.
Check Temperature
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C). Cook longer if a higher doneness is desired.
Serving
Rest the Meat
Remove the filet mignon from the skillet and let it rest on a cutting board for about 5 minutes before slicing.
Serve
Serve the filet mignon with your choice of sides, such as asparagus or mashed potatoes.
