Crust Preparation
- 1
Make the Pie Crust
In a large bowl, combine the flour, sugar, and salt. Mix well.
- 2
Cut the butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- 3
Gradually add the ice water, one tablespoon at a time, mixing until the dough begins to come together.
- 4
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- 5
Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit your pie dish.
- 6
- 7
Bake the crust in the preheated oven for about 20 minutes or until lightly golden. Remove from oven and let cool.
Filling Preparation
- 8
Prepare the Filling
In a mixing bowl, beat the cream cheese until smooth.
- 9
Gradually add the powdered sugar and continue to beat until fully combined.
- 10
Slowly pour in the Bailey's Irish Cream and vanilla extract, mixing until smooth.
- 11
In a separate bowl, whip the heavy cream until stiff peaks form.
- 12
Gently fold the whipped cream into the Bailey's mixture until fully combined.
- 13
Add chocolate shavings and gently mix to incorporate.
- 14
Pour the filling into the cooled pie crust and smooth the top. Refrigerate for at least 4 hours or until set.
Topping Preparation
- 15
Add Toppings
Once the filling is set, remove the pie from the refrigerator.
- 16
Spread the whipped cream evenly over the top of the pie.
- 17
Sprinkle chocolate shavings over the whipped cream and dust with cocoa powder for garnish.
- 18
Slice and serve chilled.
