    Prepare the Battering Mixture

    Gradually add the cold beer or sparkling water, whisking until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a thermometer or by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Batter and Fry the Cod

    Dip each cod fillet into the batter, ensuring it's fully coated. Carefully place the battered cod into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until the cod is golden brown and crispy.

    Drain and Serve

    Once cooked, remove the cod from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with tartar sauce and lemon wedges on the side.
