Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 4 hours or overnight for best results.

Prepare the Coating
In another bowl, mix together the flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Set aside.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, shaking off any excess flour.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry for about 12-15 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Remove the fried chicken from the oil and let it drain on a wire rack or paper towels. Serve hot with your favorite sides.
