    Make the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes or until golden brown. Remove from the oven and let cool.

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, mixing until combined. Add the vanilla extract and sour cream, and mix until smooth. Add the eggs one at a time, mixing well after each addition until fully incorporated.

    Bake the cheesecake

    Pour the cream cheese mixture over the cooled crust in the springform pan. Bake for 50-60 minutes or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Remove from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.

    In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Let the mixture sit for about 15-20 minutes to allow the strawberries to release their juices.
