Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Slowly whisk in the cold beer or sparkling water until the batter is smooth and well blended.

Heat the Oil
In a deep frying pan or fryer, heat the vegetable oil to 350°F (175°C) over medium heat.

Batter the Cod
Dip each cod filet into the batter, ensuring it is fully coated.

Fry the Cod
Carefully place the battered cod filets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Buns
While the cod is frying, grill the burger buns until lightly toasted.

Assemble the Sandwich
On each bun, place a fried cod filet, a slice of American cheese, lettuce, tomato slices, and a generous dollop of tartar sauce. Top with the other half of the bun.
