    Prepare the Au Jus

    In a saucepan, heat olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Pour in the beef broth, add salt and black pepper, and bring to a simmer. Let it cook for 10 minutes to allow the flavors to meld.

    Cook the Mushrooms

    In a separate skillet, add a little olive oil and sauté the sliced mushrooms until golden brown, about 5-7 minutes. Season with salt and pepper.

    Assemble the French Dip

    Slice the French rolls in half and layer the bottom half with warm roast beef, followed by the sautéed mushrooms and a slice of Swiss cheese.

    Place the top half of the roll on the sandwich and press down gently.

    Serve the sandwiches with a small bowl of au jus for dipping, and garnish with chopped parsley.
