Cheese Sauce

Method

Cornbread

  1. 1

    Prepare the Cornbread Batter

In a large bowl, mix together cornmeal, flour, baking powder, salt, and sugar until well combined. In another bowl, whisk together milk, egg, and melted butter. Combine wet and dry ingredients until just mixed.

  2. 2

    Bake the Cornbread

Preheat the oven to 400°F (200°C). Pour the batter into a greased 9-inch square baking dish. Bake for 20-25 minutes or until golden and a toothpick inserted comes out clean.

Mac n' Cheese

  1. 3

    Cook the Macaroni

In a pot of boiling salted water, cook elbow macaroni according to package instructions until al dente. Drain and set aside.

  2. 4

    Make the Cheese Sauce

In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute. Gradually whisk in milk, cooking until thickened. Stir in shredded cheddar cheese until melted and smooth. Season with salt and black pepper.

  3. 5

    Combine Macaroni and Cheese Sauce

Add the cooked macaroni to the cheese sauce and stir until well coated.

Smoked Pulled Pork

  1. 6

    Prepare the Pork

Rub the pork shoulder with smoked paprika, garlic powder, onion powder, salt, and black pepper. Cover and refrigerate for at least 2 hours or overnight.

  2. 7

    Cook the Pork

Preheat the smoker to 225°F (107°C). Smoke the pork shoulder for about 8-10 hours or until it reaches an internal temperature of 195°F (90°C). Shred the pork and mix in BBQ sauce.

Cheese Sauce for Topping

  1. 8

    Prepare the Cheese Sauce

In a saucepan, melt butter over medium heat, stir in flour, and cook for 1 minute. Gradually whisk in milk until thickened, then add shredded cheddar cheese until melted. Add salt and black pepper to taste.

Assembly

  1. 9

    Assemble the Willyshoe

Once the cornbread is baked, cut it into squares. Top each square with a generous helping of mac n' cheese, followed by the smoked pulled pork, and drizzle with cheese sauce. Serve warm.
