Method

Preparing Whiskey Glaze

  1. 1

    Combine Ingredients

In a saucepan over medium heat, combine whiskey, brown sugar, soy sauce, minced garlic, grated ginger, lemon juice, and black pepper. Stir well.

  2. 2

    Simmer

Bring the mixture to a simmer and cook for about 10-15 minutes, or until it thickens slightly. Remove from heat and set aside.

Preparing Blackened Seasoning

  1. 3

    Mix Spices

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, and salt. Mix well.

Cooking Salmon

  1. 4

    Prepare Salmon

Pat the salmon fillets dry with paper towels. Brush olive oil on both sides of the fillets.

  2. 5

    Season Salmon

For whiskey glazed salmon, brush the fillets with the whiskey glaze. For blackened salmon, rub the blackened seasoning generously on both sides.

  3. 6

    Cook Salmon

Heat a non-stick skillet over medium-high heat. Place the salmon fillets in the skillet, skin-side down. Cook for 4-5 minutes, then flip and cook for another 3-4 minutes or until cooked through.

Cooking Wild Rice

  1. 7

    Rinse Rice

Rinse the wild rice under cold water.

  2. 8

    Cook Rice

In a medium pot, combine the rinsed wild rice and water or broth. Bring to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes or until the rice is tender.

Preparing Side Dish (Optional)

  1. 9

    Steam Asparagus

In a steamer or pot with a little water, steam the asparagus for about 5-7 minutes until tender but still bright green.

Serving

  1. 10

    Plate the Dish

On a serving plate, place a bed of wild rice, top with the cooked salmon (whiskey glazed or blackened), and serve with steamed asparagus and lemon wedges on the side.
