Preparation

    Prepare the Base

    In a skillet, heat a tablespoon of oil over medium heat. Add the diced potatoes and cook until they are golden brown and tender, about 10-15 minutes. Stir occasionally to ensure even cooking.

    Add the Protein

    Once the potatoes are cooked, push them to one side of the skillet. Add the chopped ham, bacon, or sausage to the other side and cook until heated through and browned, about 5 minutes.

    Sauté the Vegetables

    In the same skillet, add the diced onions, bell peppers, and sliced mushrooms. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Mix everything together in the skillet.

    Add the Cheese

    Sprinkle the shredded cheddar cheese over the mixture and cover the skillet for a couple of minutes to allow the cheese to melt.

Cooking the Eggs

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (scrambled, fried, or poached). Season with salt and pepper.

Serving

    Assemble the Collection Plate

    On a plate, place a generous serving of the potato and protein mixture, top it with the cooked eggs, and serve with a biscuit or English muffin on the side.
