Salad Base

Chicken Marinade

Method

Marinate Chicken

  1. 1

    Prepare Marinade

In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

  2. 2

    Marinate Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

Cook Chicken

  1. 3

    Grill Chicken

Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (75°C).

  2. 4

    Rest Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Assemble Salad

  1. 5

    Prepare Greens

In a large salad bowl, add the mixed greens as the base.

  2. 6

    Add Fruits

Top the mixed greens with sliced strawberries and blueberries.

  3. 7

    Add Chicken

Slice the grilled chicken and arrange it over the salad.

  4. 8

    Add Toppings

Sprinkle candied pecans and crumbled goat cheese over the top.
