    Whisk the Eggs

    In a medium bowl, crack the 3 eggs and add 2 tablespoons of milk, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until well combined and slightly frothy.

    Sauté the Spinach and Tomatoes

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add 1 cup of fresh spinach and 1 cup of halved cherry tomatoes. Sauté for about 2-3 minutes, or until the spinach is wilted and the tomatoes are slightly softened. Remove from skillet and set aside.

    Cook the Omelet

    In the same skillet, pour the egg mixture and cook on medium-low heat. Allow the eggs to set around the edges for about 2 minutes.

    Add Filling

    Once the edges of the omelet are set, add the sautéed spinach and tomatoes evenly over one half of the omelet. Crumble 1 ounce of goat cheese over the spinach and tomatoes.

    Fold and Serve

    Using a spatula, gently fold the omelet in half over the filling. Cook for an additional 1-2 minutes until the cheese has warmed and the omelet is fully cooked. Slide onto a plate and serve immediately.
