Crust

    Prepare the crust

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the mixture resembles wet sand.

    Press and bake

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in a preheated 350°F (175°C) oven for 10 minutes. Remove from oven and let cool.

Filling

    Blend the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar, beating until well combined.

    Add sour cream and vanilla

    Add the sour cream and vanilla extract to the cream cheese mixture. Mix until fully incorporated.

    Incorporate eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined.

    Add fruit puree

    Gently fold in the seasonal fruit puree until evenly distributed.

    Bake the cheesecake

    Pour the filling over the cooled crust. Bake in the preheated oven for 55-60 minutes or until the center is set and a slight jiggle remains.

    Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.

    Before serving, whip the cream until soft peaks form. You can sweeten it to taste if desired.
