Preparation of Eggs

    Boil the Eggs

    Bring a pot of water to a boil. Carefully add the 4 large eggs and boil for 9-10 minutes. Once done, transfer them to an ice bath to cool for at least 5 minutes. Peel the eggs once cooled.

Assembly

    Prepare the Sausage Mix

    In a mixing bowl, combine 1 pound of breakfast sausage, 1 tsp of salt, and 0.5 tsp of black pepper. Mix well until combined.

    Wrap the Eggs

    Take a portion of the sausage mixture and flatten it in the palm of your hand. Place a peeled egg in the center and wrap the sausage around it, ensuring the egg is completely covered. Repeat for all eggs.

    Breading the Eggs

    Set up a breading station with 1 cup of all-purpose flour, 1 beaten egg, and 1 cup of breadcrumbs. Roll each sausage-wrapped egg in the flour, dip in the beaten egg, and then coat with breadcrumbs.

Frying

    Heat the Oil

    In a deep pot, heat 4 cups of oil to 350°F (175°C).

    Fry the Scotch Eggs

    Carefully lower the breaded eggs into the hot oil. Fry for 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serving

    Prepare the Sauces

    In small bowls, serve 1 cup of marinara sauce and 0.5 cup of stone-ground mustard alongside the Scotch eggs for dipping.

    Plate and Serve

    Cut the Scotch eggs in half to reveal the hard-boiled egg inside and serve with the prepared sauces.
