Prepare the Bread
Preheat your oven to 350°F (175°C). Cut the day-old bread into cubes and place them in a large mixing bowl.

Mix the Custard
In a separate bowl, whisk together the milk, heavy cream, granulated sugar, eggs, vanilla extract, and salt until well combined.

Combine Bread and Custard
Pour the custard mixture over the bread cubes. Gently fold the bread into the custard until all pieces are soaked. Let it sit for about 15 minutes.

Bake the Pudding
Transfer the mixture into a greased 9x13 inch baking dish. Bake in the preheated oven for 45-50 minutes, or until the top is golden and a knife inserted in the center comes out clean.

Make the Caramel
In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until the sugar melts and turns a deep amber color.

Finish the Sauce
Slowly pour in the heavy cream while stirring continuously. The mixture will bubble again. Stir until smooth, then remove from heat and add sea salt. Allow to cool slightly before serving.
