Cooking Rice

    Prepare the Rice

    In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes (or according to package instructions) until the rice is tender and water is absorbed.

    Fluff the Rice

    Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.

Preparing the Salmon

    Marinate the Salmon

    In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and dill. Place the salmon filets in a shallow dish and pour the marinade over the top. Let it marinate for at least 15 minutes.

    Cook the Salmon

    Preheat a skillet over medium-high heat. Once hot, add the marinated salmon filets skin-side down and cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.

Serving

    Plate the Dish

    On each plate, create a bed of rice, top with the cooked salmon filets. If desired, serve with steamed broccoli and lemon wedges on the side.

    Garnish and Serve

    Garnish with additional dill or lemon if desired, and serve immediately.
