Pork Tenderloin Preparation

Prepare the Pork
Preheat your oven to 400°F (200°C). In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper. Rub this spice mixture all over the pork tenderloin.

Sear the Pork
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned pork tenderloin and sear for about 2-3 minutes on each side, until golden brown.

Roast the Pork
Transfer the skillet to the preheated oven and roast the pork tenderloin for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Prepare the Vegetables
While the pork is resting, wash the lettuce leaves and slice the tomato into thin rounds.

Once rested, slice the pork tenderloin into 1/2 inch thick slices.

Spread 1 tablespoon of mayonnaise onto the inside of each sandwich roll. Layer with lettuce, tomato slices, a few slices of pork tenderloin, and pickles. Top with the other half of the roll.
