Preparation of Wild Rice

    Cook the Wild Rice

    In a medium saucepan, combine 1 cup of wild rice with 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender. Drain any excess water and set aside.

Grilling Salmon

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Grill the Salmon

    Preheat your grill to medium-high heat. Place the salmon fillets on the grill skin-side down and grill for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let rest.

Preparing Vegetables

    Chop the Vegetables

    While the salmon is grilling, wash and halve the cherry tomatoes. Slice the cucumber into thin rounds.

Making the Dressing

    Combine Ingredients for Dressing

    In a blender or food processor, combine Greek yogurt, feta cheese, olive oil, lemon juice, minced garlic, and oregano. Blend until smooth. Adjust seasoning with salt and black pepper to taste.

Assembling the Bowl

    Build the Bowl

    In a serving bowl, layer the cooked wild rice as a base. Top with grilled salmon, cherry tomatoes, cucumber slices, and arugula. Drizzle the Greek feta dressing over the top.
