Method

For the Lamb Patties

  1. 1

    Prepare the Lamb Patties

In a mixing bowl, combine the ground lamb with salt, black pepper, garlic powder, and onion powder. Mix until just combined, being careful not to overwork the meat.

  2. 2

    Form Patties

Divide the mixture into two equal portions and form into balls. Flatten them slightly to create patties.

  3. 3

    Cook the Patties

Heat olive oil in a cast-iron skillet over medium-high heat. Once the oil is hot, add the patties. Smash them down with a spatula to form a thin patty. Cook for about 3-4 minutes until browned, then flip and cook for another 2-3 minutes. Remove from heat.

For the Whipped Feta Cheese

  1. 4

    Blend Ingredients

In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, garlic, and salt. Blend until smooth and creamy.

For the Cucumber Salad

  1. 5

    Prepare the Salad

Thinly slice the cucumber and red onion. In a bowl, mix the sliced cucumber, red onion, fresh dill, white wine vinegar, olive oil, salt, and black pepper. Toss to combine and set aside.

For the Creamy Aioli

  1. 6

    Prepare the Aioli

In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Whisk together until smooth and well combined.

For Assembly

  1. 7

    Assemble the Smashburger

Toast brioche buns lightly. Spread a generous amount of whipped feta on the bottom bun, top with a layer of arugula, followed by the two lamb patties. Add cucumber salad on top and drizzle with creamy aioli. Place the top bun on and serve immediately.
