Method

Preparing the Jagerschnitzel

    Pound the Pork

    Place the boneless pork loin chops between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet.

    Set Up Breading Station

    In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and bread crumbs mixed with salt, pepper, and paprika in the third.

    Bread the Pork

    Dredge each pork chop in the flour, shaking off excess, dip in the egg, and finally coat with the bread crumb mixture.

    Fry the Pork

    In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded pork chops for about 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.

Making the Mushroom Sauce

    Sauté Onions and Garlic

    In the same skillet used for the pork, melt butter over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and cook for an additional minute.

    Cook Mushrooms

    Add sliced mushrooms to the skillet and cook until browned and tender, about 5-7 minutes.

    Add Broth and Cream

    Pour in the beef broth and bring to a simmer. Reduce heat and stir in heavy cream. Season with salt and pepper.

    Finish the Sauce

    Let the sauce simmer for about 5 minutes until slightly thickened. Stir in chopped parsley before serving.

Preparing the Spaetzle

    Make the Spaetzle Batter

    In a mixing bowl, combine flour, eggs, milk, and salt. Stir until you have a smooth batter.

    Cook the Spaetzle

    Bring a pot of salted water to a boil. Use a spaetzle maker or a colander to drop small amounts of batter into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    Sauté Spaetzle

    In a skillet, melt butter over medium heat. Add the cooked spaetzle and sauté for a few minutes until lightly browned.
