    Prepare the Vegetables

    Wash and peel the potatoes, then cut them into bite-sized cubes. Peel and slice the red onion into rings.

    Prepare the Meats

    Slice the smoked sausage into bite-sized pieces. Chop the bacon into small bits.

Cooking

    Roast the Potatoes and Onions

    Preheat your oven to 425°F (220°C). Toss the cubed potatoes and sliced red onion in a large bowl with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until golden and crispy, stirring halfway through.

    Cook the Bacon

    In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and set aside, leaving the bacon grease in the pan.

    Cook the Smoked Sausage

    In the same skillet with the bacon grease, add the sliced smoked sausage. Cook over medium heat until browned, about 5-7 minutes. Remove from heat.

    Combine Ingredients

    Once the potatoes and onions are roasted, combine them in a large serving platter with the cooked bacon and smoked sausage.

Final Touch

    Add Cheese and Gravy

    Sprinkle the shredded Monterey cheese over the hot meat and vegetable mixture. Warm the gravy in a saucepan and pour it over the entire platter just before serving.

    Serve the hearty meat platter warm, garnished with additional black pepper if desired.
