Marinating the Pork Chops

    Prepare the Marinade

    In a bowl, combine brown sugar, soy sauce, minced garlic, olive oil, black pepper, salt, and dried thyme. Whisk until the brown sugar is dissolved.

    Marinate the Pork Chops

    Place the bone-in pork chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for the best flavor.

Grilling the Pork Chops

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F / 200°C).

    Grill the Pork Chops

    Remove the pork chops from the marinade, allowing excess marinade to drip off. Discard the marinade. Grill the pork chops for about 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Rest the Pork Chops

    Once grilled, remove the pork chops from the grill and let them rest for about 5 minutes before serving. This helps to retain the juices.

Serving the Dish

    While the pork chops are resting, prepare the rice according to package instructions if not already cooked.

    Place a bed of cooked rice on each plate. Top with a grilled pork chop and serve with your choice of side, such as grilled vegetables or a fresh salad.
