Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Dates
Using a sharp knife, make a lengthwise slit in each Medjool date. Carefully remove the pit and create a pocket for the goat cheese.

Stuff the Dates
Take the goat cheese and divide it evenly into 12 portions. Stuff each date with a portion of goat cheese, ensuring it's filled well.

Wrap with Bacon
Cut each slice of smoked applewood bacon in half. Wrap each stuffed date with a half slice of bacon, securing it with a toothpick if necessary.
Cooking

Bake the Dates
Place the wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy.

Add Optional Flavors
If using, sprinkle fresh rosemary over the dates during the last 5 minutes of baking. Drizzle with balsamic glaze just before serving for added flavor.
