Method
Preparing the Rice

Cook the Rice
In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1 tsp of salt. Bring to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
Making the Cocktail Sauce

Prepare Cocktail Sauce
In a small bowl, mix together 1 cup of ketchup, 2 tbsp of horseradish, 1 tbsp of lemon juice, 1 tsp of Worcestershire sauce, and hot sauce to taste. Stir well and adjust seasoning to your liking. Refrigerate until ready to serve.
Frying the Shrimp

Prepare Shrimp for Frying
In a large bowl, whisk together 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp baking powder, 1 tsp salt, 1 tsp black pepper, and 1 tsp paprika. In another bowl, beat 1 large egg and mix it with 1 cup of buttermilk.

Coat the Shrimp
Dip each shrimp into the egg and buttermilk mixture, allowing excess to drip off, then coat with the flour mixture, pressing lightly to adhere. Set aside on a plate.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in small batches, frying for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels. Repeat with remaining shrimp.
Serving

Plate the Dish
Serve the fried shrimp over a bed of prepared rice. Add your choice of side (coleslaw, French fries, or steamed vegetables) on the side. Serve with house-made cocktail sauce.
