In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer (or sparkling water) until the batter is smooth and free of lumps. Let the batter rest for about 30 minutes.

In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). The oil should be deep enough to fully submerge the fish.

Coat and Fry the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Carefully place the battered fish into the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove the fish and drain on paper towels. Repeat with remaining fillets.

Peel and cut the potatoes into thick strips (about 1/4 inch wide). Soak the potato strips in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with a clean towel.
