Fish Preparation

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the mixture is smooth and free of lumps.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature for frying.

    Batter the Cod

    Dip the cod fillet into the batter, allowing any excess to drip off before placing it gently into the hot oil.

    Fry the Cod

    Fry the cod fillet for about 4-5 minutes, or until it is golden brown and crispy. Use tongs to carefully turn the fillet halfway through cooking for even browning.

    Drain the Cod

    Once cooked, remove the cod from the oil and place it on a plate lined with paper towels to drain excess oil.

Tartar Sauce Preparation

    Mix the Sauce

    In a small bowl, combine the mayonnaise, finely chopped dill pickles, chopped capers, and lemon juice. Stir well to blend all ingredients together.

    Season the Sauce

    Add salt and black pepper to taste. Adjust seasoning as needed.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thick strips for fries.

    Fry the Potatoes

    In a separate pot, heat the vegetable oil over medium-high heat to 350°F (175°C). Fry the potato strips in batches, about 4-5 minutes per batch, until they are golden brown.

    Drain the Fries

    Remove the fries from the oil and place them on a plate lined with paper towels. Season with salt while still hot.
