Prepare Base Options

Cook the Rice and Quinoa
In separate pots, bring water to boil. Add white rice and brown rice to their respective pots and cook according to package instructions (usually about 18-20 minutes). For quinoa, rinse under cold water, then add to boiling water and simmer for 15 minutes. Once done, fluff with a fork and set aside.

Prepare Mixed Greens
Rinse the mixed greens thoroughly under cold water. Spin dry in a salad spinner or pat dry with a clean kitchen towel. Set aside in a large serving bowl.
Cook Proteins

Grill Chicken Breast
Preheat the grill to medium-high heat. Season chicken breasts with salt, black pepper, and garlic powder. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest before slicing.

Roast Tofu
Preheat the oven to 400°F (200°C). Cut tofu into cubes, toss with olive oil, salt, and black pepper. Spread evenly on a baking sheet and roast for 25-30 minutes or until golden brown, flipping halfway through.

Bake Beef Meatballs
Preheat the oven to 375°F (190°C). Prepare meatballs using ground beef, breadcrumbs, and seasonings. Place on a baking sheet and bake for 20-25 minutes until cooked through.
Prepare Vegetables

Chop Bell Peppers and Zucchini
Wash the bell peppers and zucchini. Chop into bite-sized pieces and set aside in a bowl.

Prepare Cherry Tomatoes and Cucumbers
Halve cherry tomatoes and slice cucumbers into rounds. Add to the bowl with bell peppers and zucchini.

Arrange all base options, proteins, vegetables, toppings, and sauces in separate bowls on a buffet table. Label each item for easy identification.
